GRAPE VARIETY: Pinot Nero

CLASSIFICATION: DOC – Denominazione d’origine Controllata

PRODUCTION AREA: Calosso (At) – Monferrato – Piedmont – Italy

SOIL TYPE: calcareous marl

CULTIVATION SYSTEM: bow Guyot.

AGE OF THE VINEYARD: 9 years old.

IN VINEYARD: No use of chemicals (organic certification). All work is done by hand or with the use of small machinery. Every year we plant herbs and flowers in the vineyards to enrich the soil with minerals and other elements (controlled grassing)

IN CELLAR: No use of chemicals. Destemming and soft pressing of grapes with wooden press.

DESCRIPTION: in the glass it has a beautiful straw yellow color and a very fine perlage. The nose has intense notes of secondary aromas such as yeast and bread crust, due to the second fermentation. On the palate it is sapid, full, balanced, with a good persistence on the finish.

PAIRINGS: perfect aperitif or drunk throughout a meal. It combines elegantly with dishes such as risotto, fish, crudité, sushi. This wine is also surprising when paired with truffles.

SERVICE TEMPERATURE: 17° – 19 ° C

TECHNICAL INFORMATION: content of 75 cl.

NOTE:

Limited edition: every bottle is numbered by hand. In red wines, especially the aging ones, it is important to open the bottle. In the place where it will be consumed, at least an hour before serving, even better if decanted slowly. By doing so, it oxygenate the wine, enhancing the aromas and tastes.
