CHARACTERISTICS

GRAPE VARIETY:
Vintage 2008 – 2015 : 50% Barbera and 50% Cabernet Sauvignon
Vintage 2016 : 70% Cabernet Sauvignon and 30% Nebbiolo

CLASSIFICATION: DOC – Denominazione d’origine Controllata

PRODUCTION AREA: Calosso (At) – Monferrato – Piedmont – Italy

SOIL TYPE: clay and calcareous marl

CULTIVATION SYSTEM: bow Guyot.

AGE OF THE VINEYARD: Barbera 20 years old, Cabernet Sauvignon 25 years old, Nebbiolo 6 years old.

IN VINEYARD: No use of chemicals (organic certification). All work is done by hand or with the use of small machinery. Every year we plant herbs and flowers in the vineyards to enrich the soil with minerals and other elements (controlled grassing)

IN CELLAR: No use of chemicals. Destemming and soft pressing of grapes with wooden press.

FERMENTATION AND MACERATION: Fermentations in still tank and through various pumping overs.

WINEMAKING AND REFINING TIME: After the completion of fermentations, the drawing-off is made by separating the wine from the peels.

Vintage 2008: (Riserva) 6 months in still tank, bottling and 6 year in bottle before being sold.

Vintage 2015 – 2016: 6 months in still tank, bottling and 1 year in bottle before being sold.

DESCRIPTION:

Blend Barbera – Cabernet Sauvignon: Intense ruby red color and a slightly herbaceous scent with nuances of raspberry and cherry. On the palate it reveals a dry and full flavor. Suitable for aging.

Blend Cabernet Sauvignon – Nebbiolo: ruby red, tending to garnet with aging. It’s complex, herbaceous with hints of berries and musk. Surprising structure and body. Suitable for aging.

PAIRINGS: pleasant as an aperitif, ideal with legume soup, pasta al forno, semi-hard cheeses, with red meats and savory pies.

SERVICE TEMPERATURE: 17° – 19 ° C

TECHNICAL INFORMATION: content of 75 cl.

NOTE:

Limited edition: every bottle is numbered by hand. In red wines, especially the aging ones, it is important to open the bottle. In the place where it will be consumed, at least an hour before serving, even better if decanted slowly. By doing so, it oxygenate the wine, enhancing the aromas and tastes.
